I became similarly quince obsessed this fall. Two favorite recipes: carmelized with roasted duck breasts (for those who eat meat). I also made quince marmalade or threads from a recipe in Savory Way (D. Madison) which was very handy as I still have some on hand. My favorite has been to make dulce de membrillo, or quince paste, which also lasts well. We also experimented and made a quince cocktail spritzer with quince syrup (from one of the first quince paste experiences) and white wine or champagne. Now, of course, we are onto dreaming about what to do with all those summer fruits.

This is a great cake- definitely worth making! Poached quince would make an interesting accompaniment, I'll have to try it.

Of course, we discovered quince ourselves this year. Actually, it wasn't even me, it was my husband. We were at the market, he picked it up, and said, "Let's do something with this." So we did. But it wasn't nearly as lovely as your cake! So off to get some more quince.

Cheers!

Quince, quince, quince...it does indeed even type nicely...lol. I've never had quince before, not sure if it's possible to find in the midwest. I LOVE your photos, they are beautiful. I'm sure that quince has never presented so well til now. My favorite of these photos is of the Sesame Cake with Poached Quince...too pretty to eat as they say!

One day I'll manage to get my hands on a fresh quince. We do have a little vine (bush?) growing at the top of the driveway--very odd place to plant it, if you ask me--but the fruit never gets bigger than a ping-pong ball.

Divine photos.

Quince also makes a wonderful quince butter. When I first moved to the Seattle area, I was without a job and had a LOT of time on my hands, and stumbled on fresh qunice for the first time. So I made quince butter and homemade English muffins. I was surprised at how easy the muffins were to make, and at how good they were with the quince butter.
