The Rainier is a relatively new discovery to me, and thank god they now import them to Japan (even if they are more on an expensive side...).  I, too, have made a bunch of stuff with cherries this year, and am by all means willing to do more while they are around - and the cherry gratin sounds like a bet!  (Love that book, too!)  And oh, the parfait... mmm... :)</description>
